Can I copy the music from DVD's and burn only that with Creator 2009?

What kind of DVD? Commercial or ones you burned yourself? If copyrighted, commercial DVDs then no you can't because that is illegal. Otherwise yes. but its not a simple "copy" process.
Yes, especially if you have the Roxio USB Capture Device sold separtely OR, if you have the device that comes with the Roxio VHS to DVD program and capture device. That and a DVD player that has the RCA "out" ports (red/white audio and yellow video). Play the DVD in your DVD player and in C2009, use the program "Music/Audio--& Capture Audio From Sound Card" THEN IN THE "CAPTURE FROM" box on that screen, select the USB Capture Device Driver that should be shown as one of the choices. (USB 2861 Device). This should also be shown in the Devicer Manager under "Sound Video & Game Controllers" IF you have the capture device plugged into a USB port.
Be aware that the drivers for this device have to be installed FIRST with the capture device in a USB port before it works properly.

If I want to copy a DVD do I have to copy the whole disk or can I just copy the parts that I want?

No you don't have to copy the entire DVD. As the DVD is playing there is an option to stop and start the capture.
Just click on capture when the appropriate portion you want captured, plays and then when you get to the portion that you want to stop
the capture just click on stop the capture.

One more question...I just saw on the system requirements that the program uses 3GB of Hard Drive, I don't have that availible on my computer. Could I hook up my portable hard drive and use the program that way?
I'd clear a lot of space on that drive to be honest or install a larger one
No matter what program you install, there will always be parts in the C drive. Also temp files will be written to C and for DVD work those can take more space than you have available

Another way to extract music from DVD is given in this post. This tip is from Easy Media Creator 9 but there should be functionalities in Creator 2009 that correspond to those described in that tip.

You're welcome. You could, but I would take gi7OMY's suggestion and get a larger drive if you plan on doing a lot of this kind of work and especially video work, not just audio. And good luck getting your projects completed perfectly.
