Shortening Musice for MyDVD Menu

This has to be simple, but I can't figure it out.

I bought and downloaded musinc from iTunes, burned it to CD and converted it to MP3 on my hard drive.  Okay so far.

One song has two versions of the Navy Hymn, and I want to remove the first version and use the second as my menu audio.  

What EMC8 tool can I use for this purpose?  I would cut out the unused portion and save the remainder as a shortened MP3, which then is chosen for my menu audio.
