I purchased Toast 7 about 60 days ago for my Intel iMac...it was the only thing available at the time.  I love the Toast application, but am I correct that I now have to PURCHASE the UB version for an additional cost?

Toast 7.1 is Universal Binary. If you have purchased Toast 7, it is a free update. http://www.roxio.com...re_updates.html
