iTunes is not made to simply read the CD-Text off of burnt discs. Fortunately a 3rd party (not associated with roxio in any way) has come up with a simple solution for this problem.
Here is a link to an applescript that will attempt to take the CD-Text info off of the CD and apply it to iTunes track information.
