Hi I have created a collage which I then flattened, only after I noticed that this could be undone.  However, I would like to edit the collage some more and cannot determine how to undo this flattening.  Help?

I don't think your collage can be undone. You will have to re-create it and this time make sure you save to the correct non-flattened format.

Another good reason why you should do a File\ Save As and save a second copy of anything you're working on.   That way if you do something that you cannot undo, you can just open the other file.
