I Burned some AVI files to a Disk so i could watch them on a DVD player, Toast 7 encoded them first which took HOURS. I saved the File or the profile of the videos so if i wanted to burn them again later on I could open it up and I figured it would burn them again without encoding them AGAIN.
Well, It started encoding them again. MY QUESTION IS
How can I open up the Scheme or profile I saved and burn them again without Toast taking hours to encode them?
Doesnt it save the encoded files somewhere?
Any info on this would be GREATLY appreciated.

Save it as an Image file (File->Save as Disc Image) if you want to burn more copies later without re-encoding.

You also could duplicate the DVD you burned using the Copy menu.
When Toast does the encoding it is writing the encoded files to the Converted Items folder. By default that folder is emptied when you quit Toast. You can change this in Toast Preferences. If you Save a Toast document (.disc file) and do not empty the converted items folder then Toast will not need to re-encode. However, it will still need to multiplex the audio and video which will take a shorter time. The best thing is to Save as disc image. You can still save as disc image the burned DVD by choosing it in the Copy window and selecting Save as Disc Image.
