converting tracks to MP3 and merging at the same time merge tracks

I am converting audio books to mp3. A single disk may contain as many as 100 tracks. In Creator Classic 6.0 I was able to merge tracks as they were converted to mp3 on my hard drive. This function is greyed out in 7.5 (version 7.5.0). How do I merge tracks simultanously as I convert to MP3 on my hard drive? Why is merge tracks grayed out? In 6.0 this function was part of an update.
