Currently using EMC 10. I followed the project settings that someone had suggested. Preset (HQ), Video (720 * 480), Bitrate (Interlaced), Audio (Dolby Dig) etc.. Then when I go to encode it changes the settings to fit to disc and disregards all the above info. Is the Highest quality setting only for files lasting fewer than 1hr? I'm new to EMC 10, therefore am unsure about some of the technicalities. Any help would be appreciated.

Before burning (or encoding), choose High Quality in the dropdown on the lower right corner of MyDVD.
