Whenever I try to send tracks to iTunes, either the app crashes - or tell me that iTunes is setup properly. Any help with this would be really appreciated.

First I would make sure you have the latest iTunes and Spin Doctor versions. I have noticed that since I have iTunes in a Sub folder, Software Update doesn't always inform me when a new version is available.
Second, try trashing the iTunes and Spin Doctor preference files to see if that helps.
