I have just copied a record using Spin Doctor, and want to delete part of one of the tracks before I send it to toast. How do I go about doing this? Anyone with any ideas please?

Spin Doctor cannot do that. The customary way to do it is to save the track to the hard drive where you can open and edit it with QuickTime Pro or an audio editing application.
Alternatively you can create two tracks in Spin Doctor and export them to Toast (with Audio CD as the format in Toast). Choose zero seconds as the pause and save as disc image. Open the resulting .sd2f file in iTunes where the two tracks will be opened as a single track. Now you can export that single track from iTunes.

I'm just a fellow Toast-user so please don't blame Roxio for any misguidance I may provide. And do let me know if your issue gets solved. Cheers from Eugene, Oregon!

You might want to check out Audacity. It free and pretty good. http://audacity.sourceforge.net/
