I am not sure why it wouldn't do it, but you are begging trouble, if you are spanning those discs.
If the data that you are archiving, is important, you are far better off getting an external hard drive and backing up the data to it.

Having read many posts by people who used disc spanning, I have noticed how frantic most of them are to get their data back. It seems to me people who have lost DVDs full of data are more frantic than people who have lost CDs worth of data.
I have also seen frantic posts by people who have a bad disc somewhere in the set, and can't open anything beyond that. In some cases, the bad disc is the first disc.
If you do a search for 'retrieve' in google, using "retrieve site:http://forums.support.roxio.com" (to limit it to this site - the search function doesn't work as well as it might - leave off the quotes), you will get a lot of hits so you can read the experience of some of these people.
Some can get back most of it using a recovery program, but any file that is split between two discs (the file doing the spanning) can't be recovered.
You can go ahead and prove this for yourself, or follow grandpabruce's advice and use an External Hard Drive. Or, if there is a way to break the data into DVD-sized chunks, you can go that way. It's always good to have multiple backups, preferrably stored separately.

I've been sifting carefully through my 7.x [I do run the software] and I can't find a way to do what you want. The box is always unchecked when I get there in a new data project.
This clip from the Help system says the option is selected by default "for certain types of projects". I think it indicates that they didn't intend for it to be a default for all the "other" types, and would explain why I can't find a way to make it so.

I just recall it used to give me a little popup when I would change any setting in the Details menu asking if I wanted to make it default. Perhaps that was another program or one of the other burning options (music cd or copy dvd). I guess I'll have to live with it for now- well, at least when my new drive comes in. This burner just made a horrible noise a few minutes ago and won't open. Never can find a paperclip when you need one.
If anyone finds a way around it, please don't keep it to yourself!
EDIT: Fixed my drive! One of those little plastic washers that some people use to separate dvds on a spindle somehow made it into the drive. Removed it and everything is toasty!

Or another that I had a call out for with a 'CD stuck in drive' - got there, found an ancient 386 with a 5 1/4" floppy drive (with a CD jammed in it)
