Can someone suggest a software program (Mac) to join segmented Toast files?

That would depend on the type of segmentation.
Files like My-disc.toast.001, My-disc.toast.002, My-disc.toast.003, etc. can be concatenated using Split & Concat.
Files like My-disc.toast.r00, My-disc.toast.r01, My-disc.toast.r02, etc. can be unRARed using unRarX.
Files like My-disc.toast.part01.rar, My-disc.toast.part02.rar, My-disc.toast.part03.rar, etc. can be unRARed using unRarX.
If your file is segmented in a different way, please specify.
Files like My-disc.toast.001, My-disc.toast.002, My-disc.toast.003, etc. can be concatenated using Split & Concat.
