I have been burning .VOB files successfully, but sometimes it records the commentary audio instead of the normal film audio, and vice versa. How can I tell Toast which audio I want to match with the video? I have 8.0.5.

Click the Options button that appears when the video is in the Toast window. Then click the Audio button to choose a specific audio stream. Or you can choose to use them all and select the one you want during playback using the player's audio selection.
You mention using VOBs. Toast doesn't work well with VOBs unless they are contained within a complete VIDEO_TS folder. In that case you use the DVD video from VIDEO_TS option. Otherwise I highly recommend converting your VOBs to MPEG files before adding to Toast. It may also be possible for you to extract the MPEG video from the VOB by adding the videos using the Toast Media Browser.
