I'm trying to figure out how to edit a chunk of video that's INSIDE a clip...i.e., not at the beginning or end where I can see how to use the "trim" function. Probably obvious but I can't find a way and can't find an answer online.

On the timeline track put a split at the start of the segment you want to remove, then a split at the end of the segment. Then select the segment between the splits and delete

Is there a way to "bleep" out little bits of audio? I have interviewed people and they weren't supposed to say their earnings but forgot and said them anyway. I just want to remove that
1 second mention of the financial figures.

And I forgot to say, this is on a video clip


In VideoWave, split out those portions, of the video, but don't delete them. Right click on the split portions, one at a time, and click on Edit, then Native Audio.  In the screen that comes up, you will see a slider for Overall Volume.  Slide it all the way to the left, and click on OK.  The audio will be muted.

You may have a problem.  VideoWave may not let you make splits that close together.  Try it, and see what happens.

1 second clips should be no problem, I think. You cannot make splits within 10 frames.
