For what its worth, here's an update on what I know. Furthermore, I know someone on an AVID board that did have success. I'm trying to gather more details. If you had success, please post and let us know. I don't know if this problem is still widespread (widespread being relative to those few burning to dual layer blu-rays) or just with me! Anyway, here's my update:
I have tried to create several different image files (and volumes), but I can only create them when I limit the project to a certain size (apparently). I use the following Encode Settings:
VBR
Min: 5,000 kbps
Target: 20,000 kbps
Max: 40,000 kbps
This yields a 35 GB project with SUCCESS.
Using all of the EXACT same assets but changing to the following will NOT yield success:
VBR
Min: 5,000 kbps
Target: 24,000 kpbs
Max: 40,000 kbps
This yields a 42 GB project with FAILURE.
I've also tried the following:
VBR
Min: 5,000 kbps
Target: 23,000 kpbs
Max: 40,000 kbps
This yields a 40.5 GB project with FAILURE.
I'm going to try 22,000 kpbs as the Target yielding a 39 GB project and then 19,000 kbps just to see what happens. Is it possible that there is simply a typo and its expecting a size under 40 GB instead of 50 GB? The size on the computer of all the gi files match what DVDit Pro is suggesting (or at least as close to the nearest GB).

I have created a test BD yesterdy night. It was composed of 46.2 GB (value in decimal figure, not in computer type of figure, where 1 kilo is 1024) vido (MPEG 2 720p/29.97, .m2v) plus 3.0 GB audio (uncompressed PCM, .wav). I added three menues, wheere one is a main menue and the two others are sub-menues.
DVDit Pro-HD showed 1.06 GB of remaining space with HD-transcode setting "High Quality VBR" with target bitrate 24Mb/s (minimum 15 Mb/s, maximum 30 Mb/s) and Dolby Digital (2/0).
I started compiling into a volume, which has run all the way up to the "write volume" phase. Here it stopped with the "Project Size too big" error.
The indication of available space (bottom left) has changed and showed 2.03 GB too big, now. For a quicker test, I replaced the original video and audio files with the transcoded files from DVDit. They are slightly smaller (video 44.6 GB plus Dolby Digital audio 0.74 GB). The storage indication at the bottom left did not change and still showed 2.06 GB too big for a dual layer BD. Nevertheless, I started compiling an ISO file. It has run up to "Creating Links" and stopped again with the "Project Size too big" error.
Now I changed the transcoding parameters to target bit rate 20 Mb/s (minimum 15 Mb/s maximum 30 Mb/s). The storage indication now changed to 4.65 GB remaining. I started compiling a volume, which ended successfully. The size of the created volume 43.7 GB (decimal notation).
Summary: DVDit ProHD can handle disk sizes above 40 GB. The indication of available disk space (bottom left) is not accurate and should only be taken as an aproximation. It is advisable to have about 10% disk space left, i.e., the used disk space should not exceed 45 GB.
I hope this helps others to overcome similar problems.
