How can I stop the dvd player from playing  the dvd when I want to copy this dvd

As soon as it autostarts, stop it from playing, then go to My Computer, right click on the DVD drive, and select Explore.  Then copy all of the files to your hard drive.

If you are copying to another DVD, just stop it from playing, open up Copy Disc, and copy from the DVD to another DVD.

If it is something else that you want to do, you need to explain what that is, and what type of DVD you are copying.

Go to Autoplay in the Control Panel and set the action you prefer for the media type inserted. I have all mine set to Take No Action but you might prefer something else. Be sure to scroll down in the AUTOPLAY window to pick up all of the choices.
