Can't seem to change the background image, background audio, or anything.

Assuming that you have more than the essentially, there are two things --- did you load the content disc?
Also, update the drivers to your video card.

Please post your computer specifications including as much about your video card as you can.  AT the top of that page, click on tools then options.  There should be a dot next to hardware or software.  Where is it.  Run the test.  does the dot stay at the same place?  (you won't get any report, just the dot may change.)  Since you are seeing only part of the commands, I would bet that your video card/chips needs to be updated -- first software and then maybe hardware.

Regardless of what I say about computer maintenance, there is no need to defrag a solid state hard drive.

Can you add a movie or change menu style?  Are the settings greyed out?  Try closing and opening the window and see if you can use those options.

Another person with that card and problem updated both DirectX 9© and the ATI drivers.  Read this.

MyDVD 8 Essentials won't let you change the background... you will need to purchase MyDVD 8 Premier...

Did you find anything else about this?  I have the same problem. I know the previous poster said it wasn't a feature and we needed to upgrade...but it seems pretty clear to me that all the options that you mentioned should be there.  I am calling Roxio tomorrow. My 4.o version that came with my computer is much better with menu features!!!

if you purchased MyDVD 8 Essentials directly from Roxio/Sonic, get a refund and buy MyDVD 8 Premier... that's the only solution for the issue you have...
