Did you have the closed captions and/or subtitles displaying from the VHS player at the time you were capturing the video to the Mac? I would expect anything displaying to be recorded. Of course, they will be permanently part of the video and no longer selectable, but that's just what happens when analog sources are converted to digital.
I'm just a fellow Toast-user so please don't blame Roxio for any misguidance I may provide. And do let me know if your issue gets solved. Cheers from Eugene, Oregon!

Thank you kindly for your prompt response. The only thing that displays is the movie itself.

I don't have much experience with closed captions or subtitles from VHS tapes. I thought the VHS player itself accessed and displayed those, but maybe they are only accessed via the controls on the TV the same as when watching a broadcast TV program. So is it the remote control on the VHS player that displays them or the remote control on the TV? If it's the former then I'd expect the text to be part of the video being captured, but that wouldn't be the case if it is the latter. How do you have it connected to the Roxio device? If you are using S-video give it a try with the composite video instead.
