how to take video from large files like highlights and make into its own video

I have many hours of football footage. Some of the footage was shot with a mini dv camcorder and some was shot with my new Canon hfs-10.
A friend of mine has asked me to compile video highlights of his sons season. How do I take each game and go through the footage , pick out the actual play I want to use and save it to its own file and at the end of the day have all the plays on one file, a highlight DVD ?

I actually have creator 2009 can you tell me if I should go to the videowave tutorial on line ?
No its not a double post but it sure is strange, 2 different people wanting to do the same thing.
