Output video resolution

I captured some video today from a Hi8 tape using the composite video cable and the high (not standard) resolution setting on EV2D4Mac. The resulting .mpg file was 720x480 resolution, and the .mov file brought into iMovie was 640x480. Is this the best resolution that I can get from the software, or is this an issue with composite video? I use the composite jack into my TV all the time, and it looks fine. What sorts of resolutions are people seeing from the S-video jack? I thought the only difference between the input jacks was the quality of the video, not the resolution of the digitized video. There is no resolution information included on the box, other than the phrase "full-DVD quality resolution," which seems to me to be higher than 640x480, which is more like VGA-quality.

The full resolution of a NTSC video DVD is 720x480. Sometimes a 720x480 video is reported as 640x480 by QuickTime (and therefore iMovie). The difference is square computer pixels rather than rectangular TV pixels. I don't understand it, either. All I know is this is the full size of standard-definition video. You aren't missing anything.
