burning a .Toast file to Blu Ray - menu oddities Annoyances

Very new to all this Blu Ray stuff but..
Managed to edit my AVCHD video as 6 separate videos in FCP. Export as Quicktime .mov files OK. Get them into Toast 10 Platm OK. Burn as disc image OK.
Then confusion...what to do with the .Toast file.How to get it to my BR recorder and onto BD-RE disc. Fathomed that out (Manual not helpful on this). Saw all the videos nicely lined up BUT BUT BUT they were in alphabetical order according to the names given to them (by me) in FCP!

I failed to notice this until after I had burnt the disc, played it on my PS3 where ,of course the menu showed the videos in that alphabetical order.
As this was a record of our holiday travelling across Canada I wanted the things in chronological order. Big disappointment.

Am testing a possible solution by renaming the clips in the toast environment by preceding each video name with a number. These are then used by the menu program to place the videos, with my original titles, in the correct order on screen. What a pfaff!

Next real grumble.
1) Watched a tutorial where Toast 10 had many more menu templates than I have. Why?

2)There is only the same dull fawn background to all menus. Choosing different menu styles only changes the thin frame round each menu item. Why?

Please put me straight.
