I have several audio projects saved on my hard drive in CD2 format from EMC 2009. My EMC 2009 insists on a CD-RW disk being in my drive and will not create the disk to CD-R disks.
I've been forced to save my project tracks to my music file and import them into iTunes to a playlist and create the cd's in iTunes. What has happened to my Easy Media Creator 2009?

I don't know what's happened to your C2009, but I've just run mine up and I'm not having any trouble burning the C2D images I'm making onto CD-Rs.
Insisting on having CD-RWs certainly isn't a feature of C2009. If you used to be able to write to CD-Rs, what has changed on your system since then? Updates? New programs? Other burning programs which might interfere with C2009?

There's no chance you accidentally put in a DVD-R disc instead of a CD-R disc, is there?
