Actually, I always use the interface to set up and launch backups. So do I really need to use UDF formatting (is it available in Version 10?)?
Would I miss out on some feature/flexibility only existing when the media is formatted as UDF?

Do you really need to use UDF formatting, No. W-7 has a UDF Formating included in the operating system.
"Is it available in Version 10?" there is no version 10. There is a Easy Media Creator 10
and a Creator 2010 both you can write UDF probably not the way you've been doing it in Easy
Media Creator 8 tho...

Creator 2011 was released a few days ago. It's compatible with Windows 7.
It has "Roxio Burn - Secure" which enables you to drag files and drop them onto a disc icon for burning. It writes UDF discs, however you don't format the discs first and you don't get Drive Letter Access like you did with Drag-to-Disc and DLA. It's all run through a GUI rather than integrated into Explorer, and you have to drag and drop the files and then burn them in batches.
If you have Windows 7, it might pay you to check out the 'Live files" system built-in to the operating system, and see if it will do what you want.
Your EMC 8 Drag-to-Disc is incompatible with Windows 7, but I have an experimental install of EMC 9's D2D running in Win 7. It seems to work quite happily, but it is totally not supported by Roxio.
