I'm clicking the Burn Audio button, and when I put my CD-R disc in, I get the message "This disc cannot be used for this project"
What kind of disc do I need to use ?

Yes, they are empty. They're new out of the box.

Technical support just e-mailed me that the acceptable disc formats are:
CD-R/RW, DVD+R/RW, DVD-R/RW, DVD-R DL, DVD+R DL, DVD-RAM, BD-R/RE, BD-R/RE DL
I am using a CD-R, so I guess I have to use a CD-R/RW instead.

Not for the Roxio software, you don't. Have you burned CD-R discs on your burner, before?
What are you trying to burn to the CD?

Of course a CD-R is acceptable media for any CD Project:
Now this assumes you picked a CD type Project, like Burn Audio CDs:
If you picked one like Create DVD Music Discs then you must use a DVD
