When I move a 5 GB HD home video to Toast 10 with intent to copy it to BR disk, it compresses it to 1 GB. I assume this reduces the quality of the movie. Is there a setting that is causing this to happen? I tried changing some of the encoding settings, but they all compressed the content even more.

What settings are you using? How does Toast describe the source video's specs when you add it to the Toast window?
I'm just a fellow Toast-user so please don't blame Roxio for any misguidance I may provide. And do let me know if your issue gets solved. Cheers from Eugene, Oregon!
