As to 'Recording Time', it depends on Quality you set it for:
(these are with a 4.7 GB, you can double that with an 8.5 GB)
You also need to realize that NO ONE will recommend using Record DVD!
You have already found out the reason why
If you use Record - Edit - Save, you don't waste DVD's or your time when minor problems are encountered...
Try that method but save a little trouble and make a test capture or 2 in the area where the other one has been stopping. If it will record through that area of the tape, then start one from the beginning

This is the same problem that I'm having. When there is a blank spot on the VHS tape, there is a Signal Lost and it stops recording. I really don't want that "feature" since there are so many VHS tapes that have blank spots. I just want to capture the whole thing and edit out the blank spots later. I've tried setting a duration and it still stops recording.
How can I bypass this and record an entire VHS tape without a premature finish?

Some of the devices seem sensitive to "blank spots" in the recorded tape.
Try stopping the tape - Fast Forward to the end - Rewind back to the beginning and try again, this has worked for some users

Yes that is about all you can do and/or record all the different segments and then put them together as one DVD...

Yes, this was driving me crazy too, my solution was to connect my camcorder to my VHS player, and then connect the VHS player to the Roxio usb. Now it shows as having a constant signal being fed to the the program, and so now I can run a 6 hr tape full of gaps and forget about it (don't forget to set the capture length - otherwise). Also had to adjust the recording sound to eliminate choppy noises.

I think the problem there is that they have a VHS as the Source and can only pass-through another VHS Player or DVD Player. In that case the signal is not changed at all so the problems follow along
