Sounds like you might benefit from a firmware update. You don't list any specs so it's hard to make other suggestions at this point.

Here is an explanation of what that means:
CD-RW drive must record with a continuous stream of data. They have a buffer where data is to be written temporally stored. An underrun condition occurs when the buffer becomes empty and no data is available to write when needed. This can occur if the computer becomes busy doing too many other things. An overrun condition can occur when the computer sends data to the buffer faster than the data in the buffer can be written-out to a CD—it overflows and data is lost.
As Paul requested, post your specs. If you are doing too many things at one time, your computer can't send the data fast enough and you can get this. Make sure you have plenty of hard drive free space and that it is thoroughly defragged.

And your burner is? What else is running at the same time? How much unfraggmented free space on that hard drive?

I defragged the hard drive yesterday leaving me with 32% free space and I have no idea what else is running.... but I make sure to close out all windows and sign off the net
The funny thing is though, that I can burn a CD using Windows Media Player but not Creative 8

Different programs have different "things" they put on a disc so it is not surprising that this could happen. If you have any packet writing programs on your computer, that may also be causing you a problem Roxio's is Drag to Disc; Nero's is InCD. Get rid of them unless you just want to copy information from one computer to another -- very short term storage. You are using Music Disc Creator, correct?
That's a very old burner (and computer); so old that Lite-On doesn't even list the drive (HP doesn't list that processor). The burner may be dirty or starting to fail. Try cleaning it first by using dry air (be careful) or by using a CD cleaner. You may want to consider updating that burner to something newer. Do you have a DVD burner? If you don't want to get into your case and you have a USB 2 or Firewire port, you can get an external burner pretty cheaply.
With that computer and V8, I would not be surprised that you would have major problems doing any video work.

Any idea what speed Windows Media Player is burning at? I'm guessing that EMC 8 is set for "max speed". If WMP is burning slower, that could easily account for the difference, in which case, selecting a slower speed in EMC 8 could solve the problem.
