Will the "best quality" record time to a DVD double with the use of a dual layer DVD...ie. 2 hours?

Yes, approximately ;)

SET Quality then see if it tells you it will or will not fit.

One nice thing added to EVD 3 was the ability to SPLIT projects across 2 discs :o

It allows you to set the split point and to choose to continue the Menu or just Play on Close ;)

A single layer 4.7 GB holds 4,464 MB with a 18 MB safety zone on the edge of the disc.

A Double Layer 8.5 GB holds 8,124MB with a 18 MB safety zone on the edge of the disc.

Roxio software will burn past the safety zone, so I would advise you to back it down a bit.
