I previously created a DVD project and somehow was able to select the background that appears on page 211 of the Creator 8 manual (It's badically like water flowing through a tube). This is the background I want. I can only seem to choose the one that is the stream flowing. How can I switch?

The stream flowing is probably the brook; the other one you described is probably the spring.  What do you see for the options when you click on "Change Menu Style" about the middle of the page on the left.  If you see only about three options,  and you had others before, try a install repair on the Roxio Content program using Windows Start Settings Add Remove programs etc.
