Release date of iTunes 7.0/QuickTime 7.1.3/iPod H.264 640x480 spec: 09/12/2006
Release date of latest Toast update: 06/30/2006
Could you deliver a product 2.5 months before getting the specs?

Joe,
You can try Handbrake (Free) or Cinematize for converting DVD files to iPod and then do a custom setting.
You can also visit Chris Bevan's site to check and see that your custom setting would would work. I am not sure if the web Page has been updated to accommodate the new iPod size.
