Best Way To Convert From DVD To Hard Drive?

What's the best way for converting clips from DVD's onto the hard drive so I can make my own compilation. I'm trying to make some DVDs from my old VHS tapes... I've tried using video capture devices attached to the PC but I've not had much luck with them... The best quality I can get is to first record the VHS tape onto my stand alone DVD recorder, then convert it to a good quality file on the PC to then make my own compilations and burn to DVD.

I've tried a few convertion methods but the quality hasn't been that good once I've burnt it back onto DVD from my PC.

What's the best way to convert so I don't lose too much quality? Is an avi file the best way to go?
