Set Toast to Video mode. Drop you movie file. Select the clip, by clicking on the text next to the preview. Use the Export button near the bottom of the window. A Save As dialog box appears. Use the Format selector to choose an iPod preset.

 

I'm having the same problem trying to convert to ipod after I updated to 9.0.4. I no longer see an export button at the bottom of the video window. Which version are you using? Is there an alternative to the export button in version 9.0.4?

Roxio moved the export function in Toast 9. There now is a Convert window where clicking the red button is like clicking the Export button in earlier versions. The Toast windows from left to right are Data, Audio, Video, Copy and Convert.

I'd use the Video iPod preset. There are three quality options: Standard, High and Fastest. If you have a good-quality source you probably can get by with fastest and not see any difference, but it's best to experiment and see what looks best to you. Faster encoding will look worse when there is lots of action or very dark scenes.
