Check this first

http://forums.support.roxio.com/topic/82368-roxio-game-capture-hardware-output-color-coded-setup-connection-diagram-is-wrong/

Also, verify that your console display settings are set correctly

Change the screen resolution

  1. Press the Guide button on your controller, go to Settings, and then select System Settings.
  2. Select Console Settings.
  3. Select Display.
  4. Select HDTV Settings.
  5. Select the appropriate screen resolution for your TV or monitor.

This happens to me a few times, it is almost always a result of the following (usually due to my Wii):

Playing Gamecube games through my Wii in 480i with the Roxio TV Standard seting higher than that/region set wrong

Playing a nintendo Wii/Xbox 360/PS3 game with the wrong TV Standard (usually a result of still having them on my gamecube settings)

That's because when you have the HDMI cable plugged in and then try to use Component the video output setting has to be changed.Doing what you did does that.I believe it tells you this in the PS3 manual somewhere.

And yes I'd take the HDMI cable out.
