Toast comes with a selection of menu styles that are installed in one of the libraries when you run the Toast installer. You should be able to see the other styles when you click on the default Splash menu style at the right part of the Toast window. If you aren't seeing any other styles then I suggest trashing the Toast plist and prefs files in your User>Library>Preferences folder and relaunching Toast. You access that library in Lion and Mountain Lion by holding down the option key when selecting the Go menu in the Finder.

I'm having the same problem. The only menu listed is "Splash." I trashed the plist preference, and relaunched, but there are still no menus. I trashed all the Toast prefs, still no menus.

The Toast installer places all but the Splash menu in the root Library>Application Support>Roxio>Toast Menu Styles folder. If that folder isn't there then I suggest going to Roxio's Software Updates page and downloading the Toast 11.0.4 update. Running that installer should place the folder and its contents in the library.

I had the same issue and the update did not resolve this, however I navigated to Library / Application Support / Roxio and noticed the Toast Menu Styles folder had a No Access privilege assigned to it. Changing this to Read and Write and relaunching Toast enabled access to the extra menu styles.
